Nicole Walsh

Director of Dietary Services

Nicole joined the Campion team in May 2019. She brings with her a passion for Medical Nutrition Therapy which she attributes to a diagnosis of Celiac and Diabetes of a close family member while Nicole was still in high school.

After completing her BS degree at the University of Massachusetts Lowell in Clinical laboratory/Nutritional Sciences, she received advanced certification in the Didactic Program in Dietetics at Simmons College. Following graduation, Nicole completed a 9-month long Dietetic Internship with concentrations in Clinical Nutrition/Food Service Management through the Morrison/Chartwell’s program. Nicole developed strong clinical skills through her rotations at UMASS Memorial Hospital in Worcester, MA in multiple ICUs and critical care rotations, as well as successful and ongoing training in dementia care.

Before joining Campion’s team, Nicole worked in a SNF/Subacute Rehabilitation facility, where her compassion for working with the elderly deepened. Her commitment to patient education, diet adherence through menu correction, and care for the whole person was always evident. Her commitment to provide the best care at all times is her daily mantra.

Nicole is part of the healthy aging nutrition group by the Academy of Nutrition and Dietetics and continues to be an Academy of Nutrition and Dietetics member. She is also SERVSAFE certified. Nicole is eager to enhance the lives of the Jesuit community through nutrition education and their daily dining experience.

In her free time, Nicole enjoys spending time with her family, her beagle, Mandy, and her weekly HIIT exercise class.
